Ingredients
- 15 oz can chickpeas, rinsed and drained
- 1/4 cup tahini
- 1/2 tsp finely shredded lemon peel
- 3 Tbsp lemon juice
- 4 cloves garlic
- 1/4 tsp salt
- 1/8-1/4 tsp cayenne pepper
- 1/4-1/2 cup water
- Dippers: cracker bread, endive, baby bok choy, cucumbers, red peppers, etc
Preparation
Step 1
1. In a food processor combine chickpeas, tahini, lemon peel, lemon juice, garlic, salt and 1/8 tsp cayenne pepper. Process till smooth, adding enough water to reach desired consistency.
2. Refrigerate up to 48 hours. To serve, top with diced cherry tomatoes and or chives, drizzle of olive oil and or a dash of additional cayenne.
