Chiles Rellenos Pie

Ingredients

  • 2 7 1/2 oz. can green chiles (whole)
  • 1 T oil
  • 1 lb. Jack cheese (sliced)
  • 6 eggs (beaten)
  • 1 can evaporated milk
  • 1 lb. cheddar cheese (shredded)
  • Hot chili sauce

Preparation

Step 1

Slit chiles, spread flat. Remove seeds and rinse and drain. Dry with paper towel. Rub oil on bottom and sides of 9x13 pan. Spread half the chiles in pan skin side down. Place half the Jack cheese on top and sprinkle with salt and pepper. Combine eggs and evaporated milk and pour over chiles and cheese. Sprinkle with cheddar cheese.

Bake at 350 degrees for 45 minutes. Cut and serve with sauce.
