  • 2/3 cup minute rice
  • 3 cups milk
  • 1/4 cup raisins
  • 2 slightly beaten eggs
  • 2/3 cup sugar
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1/4 tsp. nutmeg



Step 1

Combine rice and milk in saucepan. Add raisins if desired. Mix to moisten all rice. Bring to a boil and remove from heat. Mix 2 slightly beaten eggs, sugar, salt and vanilla. Add nutmeg if desired. Add hot rice mixture slowly, mix well. Turn into 1 1/23 quart baking dish. Place in pan of hot water and bake in moderate oven (375 degrees) for 35 minutes or until done. Stir several times during the first 20 minutes of baking. Serve pudding warm or cold.
