Chicken with Artichoke's, Onion and Cream

Easy and delicious, if making only 2 halves, use a 10" skillet so sauce will not boil away. You can halve sauce if only making 2 pieces and are watching calories, if you want a sauce to put on pasta, spaghetti squash, noodles or rice use the full amount of sauce.If chicken is preped you can make this dish in about 10 min. Also have everything ready before starting this goes fast.

Ingredients

  • 4 small chicken breast halves, 4-6 oz. each
  • 1 tablespoon olive oil
  • 4 quarted artichokes, or half a can, this recipe uses canned artichokes
  • 8-10 small onions, again buy frozen and let thaw a little, or you can also use a small onion cut into thin slices
  • 1/3 cup marsala wine or maderia
  • 1/3 cup heavy cream

Step 1

In 10" skillet heat pan and add olive oil. Salt and pepper chicken lightly and add to pan, using med. heat. When brown turn and cook about 1 min. I take chicken out at this point and cover. Add onion's to skillet with artichokeds, brown, stirring constantly. Add marsala wine and cream, let cook till reduced and starts to thicken, return chicken to pan, let cook covered about 1 minute more. Remove from heat, cover and let sit about 5 minutes. The chicken will continue to cook while cover is on. If needed add a little more wine and a little more cream if it reduces too much.
