Pecan Pie Muffin
I usually double the recipe and freeze what I don't use.
These are great for brunch or dessert.
Sometimes I dust with powdered sugar
- 1 cup firmly packed light brown sugar
- 1/2 cup all-purpose flour
- 1 cup chopped pecans
- 1/4 teaspoon salt
- 1/2 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla

Place 1st four ingredients in a mixing bowl and make a well in the center. Add butter, eggs and vanilla. Stir until moistened.
Spoon batter into lightly greased mini muffin pan. Bake at 400 degrees for about 10 minutes. Makes 24 muffins.
