Ingredients

  • 1 pkg. dry yeast
  • 1/4 cup warm water
  • 3/4 cup buttermilk
  • 2 1/2 cup flour
  • 3 T sugar
  • 1 1/2 tsp. baking powder
  • 1/2 baking soda
  • 1 tsp. salt
  • 1/2 cup shortening
  • Melted butter (for top)

Step 1

Dissolve yeast in warm water and let stand 5 minutes. Stir in buttermilk and set aside.
Combine flour, sugar, baking powder, soda and salt in mixing bowl. Cut in shortening with a pastry blender until mixture resembles coarse meal. Stir in yeast-buttermilk mixture.
Turn out onto a floured surface; knead lightly 4-6 times. Pat or roll to slightly more than ½ inch thickness.
Cut with a 2 inch biscuit cutter, dipping the cutter in flour between cuts. Place on an ungreased baking sheet. Cover and let rise in a warm place about 1 to 1 ½ hours or until nearly doubled. Bake in a 450 oven for 7-8 minutes or until golden. Lightly brush tops with melted butter. Makes 16-18 biscuits.
