Ingredients
- 4 chicken breasts halves
- 4 cup water
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup skim milk
- 8 oz. plain lowfat yogurt
- 10 1/2 oz. can cream of chicken soup, undiluted
- 5 unsalted crackers, crusted
- 1 tsp. margarine
Preparation
Step 1
Cook chicken until done-chop into coarse pieces. Place chicken in a 1 quart casserole coating with cooking spray and sprinkle with salt and pepper. Combine milk, yogurt and soup in a medium bowl, stirring until well blended. Spoon mixture evenly over chicken. Combine crushed crackers and melted margarine, stirring well. Sprinkle cracker mixture evenly over top of casserole. Bake at 350 degrees for 20 minutes or until thoroughly blended.
