- 1/4 cup butter
- 1/2 cup light corn syrup
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup condensed milk
- 1 t vanilla
- 1/2 cup chopped nuts, optional
Line an 8x8-inch baking dish with parchment paper. In large microwave glass bowl, melt butter. Stir in corn syrup, sugars and condensed milk. Mix until most of sugar is dissolved. Microwave on high for 2 minutes. Stir. Microwave for 2 more minutes. Stir. Microwave for 2 more minutes. Stir in vanilla and nuts. Pour into prepared pan. Let sit until set. (Several hours.) Or, *refrigerate until set. Cut and wrap in waxed paper.
*Bring caramels to room temperature before cutting.
Note: Total Microwave Time: 6 minutes, 10 seconds.
For Salted Caramels: After mixture cools in baking dish for 15 minutes, sprinkle with coarse sea salt.
