Turkey Curry over Rice

3 T butter or oil
In 3 qt saucepan over medium heat, melt butter/heat oil.

1 lg. carrot, peeled and diced
1 medium onion, cut in half and sliced
1 lg clove garlic, crushed
Add to hot pan; cook 10 mins. until vegetables are tender, stirring occasionally.

2 t curry powder
1/2 t ginger
1 T flour
Stir into vegetables and cook 1 minute.

2 c chicken broth
1/2 c water
1/3 c raisins
1 t Tabasco sauce (more if you like it spicier)
1/4 t salt
Add to veggie mixture, bring to a boil over high heat, then reduce to low, cover and simmer 10 minutes, stirring occasionally.

2 c chopped, cooked turkey
Add and cook until heated through.

1 T fresh chopped parsley
Stir in.
Serve over cooked rice.

Step 1

1. In 3 qt saucepan over medium heat, melt butter/heat oil. Add carrot, onion, and garlic to hot pan; cook 10 mins. until vegetables are tender, stirring occasionally.

2. Mix together curry powder, ginger and flour. Stir into vegetables and cook 1 minute.

3. Add broth, water, raisins, Tabasco sauce and salt to veggie mixture, bring to a boil over high heat, then reduce to low, cover and simmer 10 minutes, stirring occasionally.

4. Add turkey and cook until heated through.

5. Stir in chopped parsley and serve over cooked rice.
