Potato Soup

  • 4 potatoes
  • 2 onions – chopped
  • 3 stalks celery – chopped
  • 1/2 tsp. salt
  • 2 T butter
  • 1 Cup milk
  • 1 cup chicken broth
  • 1/2 tsp. paprika
  • 1/2 tsp. pepper



Step 1

Peel and dice potatoes. Add potatoes, onions and celery into heavy pot with enough boiling water to cover the vegetables. Add salt, cover and cook until potatoes are tender. Drain and mash the potatoes with a fork, leaving slightly lumpy. Add butter and stir. Add enough warm milk and broth to reach desired consistency. Add pepper, paprika and additional salt if needed. Simmer for 10-15 minutes. Serves 3-5 people. You may top with cheese, bacon, green onions if desired.
