Ingredients

  • 1 medium head cauliflower, broken up
  • 2 garlic cloves
  • 6 tbsp butter
  • 2 tbsp flour
  • 1 1/2 cup milk
  • 4 bacon strips, cooked and crumbled
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • dash cayenne pepper
  • 1 cup shredded swiss cheese

Step 1

In large pan, boil cauliflower in 1 inch of water. Reduce heat, cover and cook for 6-8 minutes or until crisp-tender. Drain well.

In another pan, sauté garlic in butter for 1 minute. Stir in flour until well blended. Gradually add milk. Bring to a boil. Cook and stir for 2 minutes or until thickened. Remove from heat. Stir in cauliflower, bacon, salt, pepper and cayenne.

Pour into a greased baking dish. Sprinkle with cheese. Bake uncovered for 15-20 minutes or until cheese is melted.
