Ingredients

  • 4 chicken breasts
  • 1 pkg mild taco seasoning
  • 5 1/2 c chickien stock
  • 2 T butter
  • 2 cans cream of Chicken soup
  • 10 t=flour tortillas, cut into 1" pieces
  • 4 c shredded Mexican blend cheese
  • Cooked Rice

Preparation

Step 1

Place chicken in crockpot. Top with all but 2 t taco seasoning.Pour over 3 1/2 c stock.
cover and cook Lo 4-5 hours until tender.Shred chicken.
Heat overn to 350
Heat butter int skillet and stir in remaining taco seasoning, stock and soup.Stir in chicken.
Hayer 1/2 chicken, tortillas and cheese into 3 qt shallow baking dish. Repeat layer. Bake 30 minutes until hot and bubbly. Serve over rice.
