Probably best as an appitizer but we love it so much we make a meal out of it! Toss the diet out the window though if you do!!

Ingredients

  • 16 little neck clams
  • 4 cloves garlic
  • fresh parsley
  • 1 can diced tomatoes
  • olive oil
  • 3 tablespoons butter
  • crushed red pepper
  • fresh crusty bread

Preparation

Step 1

put clams in a bowl of cold water for 15 - 20 minutes to purge.

slice garlic, chop fresh parsley (both to taste)

in skillet add 2 parts olive oil to 1 part butter add garlic to oil & butter and cook for 4 - 5 minutes medium heat.

add clams and lots of crushed peppers, cook for 4 - 5 minutes then add tomato & parsley, continue cooking until clams open.

Dip warm bread in sauce and enjoy!
