Pineapple Cake

Ingredients

  • 2 cups sugar
  • 20 oz. can crushed pineapple
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 2 cups flour
  • 1/2 to 1 cup chopped pecans (optional)
  • Topping
  • 8 oz. cream cheese
  • 1 stick melted butter or oleo
  • 3/4 cup sugar
  • 1/2 cup chopped nuts OR 1 flat can of pineapple tidbits (drained)

Preparation

Step 1


Mix ingredients by hand in order listed, stirring well after each.
Bake in 9x12 pan (ungreased/unfloured). Bake at 350 for 30 minutes or until toopick comes out clean.

After removing from oven, ice cake while warm with the following.



For Topping:

Combine by hand, stirring well. Spread on hot cake.
