- 1 3 oz . pkg. cook and serve vanilla pudding mix
- (do not use instant)
- 1 1/2 cup light brown sugar
- 1/2 cup evaporated milk
- 1 T butter
- 2 cups pecan halves
Combine pudding mix, brown sugar, milk and butter in medium saucepan. Heat slowly until sugar dissolves – stirring constantly. Stir only occasionally then until 238 degrees or soft ball stage.
Remove from heat and stir in pecans with wood spoon. Stir until begins to thicken. Take up on wax paper with teaspoon. If it gets too hard set pan in hot water.
