Ingredients
- 4 c. flour
- 2 c. quick oats (uncooked)
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 1/2 c. margarine
- 2 c. packed brown sugar
- 1 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1 can (16 oz.) pumpkin
- 1 c. chocolate chips
- icing optional

Step 1
Preheat oven to 350 degrees. Sift flour, soda, cinnamon, salt, then mix oats in. Set aside. Cream butter, gradually add sugar and beating until light and fluffy. Add vanilla. Mix well. Alternate additions of dry ingredients and pumpkin. Stir in morsels. Lightly grease cookie sheets. Drop by tablespoon, Smooth out a little. Bake at 350 degrees 20-25 min until cookies are firm and lightly browned. Remove immediately from sheets and cool on racks. Decorate with icing and cookies (candy corn). Store in airtight container. Dough can be frozen in airtight container.
