Ingredients

  • 3 chicken breast halves on the bone
  • water as needed
  • 6 T. unsalted butter
  • 1 C. fresh bread crumbs
  • 2 T. chopped onion
  • 1/4 C. all purpose flour
  • 2 C. whole milk
  • salt and gound pepper
  • 1 large egg, beaten to blend
  • 1/4 C. heavy cream
  • 6 slices *Drier's* ham
  • 6 slices swiss cheese

Preparation

Step 1

Preheat oven to 350, generously butter 12x9x2 inch baking dish
Place chicken breast in a saucepan and cover with water. Cook gently, never boiling, until the meat is white and firm, about 20 min.
Remove the chicken from the broth and cool. Remove the meat from the bone and cut into large chunks.
In saucepan melt butter, Remove 2 T. of melted butter and toss with the bread crumbs aside. Cook the onion in the remaining butter until translucent. Add flour ro form roux. Cook 1 min.remove from heat and slowly whisk in milk. Season with salt and pepper. Return the sauce-pan to heat and simmer over low heat stirring frequently until sauce thickens.Add egg and cream stir for another minute.
Arrange chicken in a layer over baking casserole.Cover with the ham and then cheese.Pour the sauce over the casserole.Sprinkle the reserved bread crumbs over entire top of casserole. Bake until golden brown on top about 30 min.
