Ingredients
- 1 1/4 c. graham crackers
- 2 T sugar
- 3 T melted butter
- 1 9 oz. cream cheese (softened)
- 1 c. sugar
- 1 T lemon juice
- 1/4 tsp. vanilla
- 3 eggs
Preparation
Step 1
Heat oven to 350 degrees. Mix crackers, 2 T sugar and melted butter. Press in bottom of spring-form pan. Bake 10 minutes and cool.
Reduce heat on oven to 300 degrees. Beat cream cheese and add 1 c. sugar gradually, beating until fluffy. Add lemon juice, vanilla. Beat in 1 egg at a time. Pour over crumb mixture. Bake until center is firm, about 1 hour. Cool to room temperature. Refrigerate at least 3 hours but no longer than 10 days. Top with sour cream or any fruit filling.
