Gratineed Tomatoes with Asiago and Fresh Herbs

Ingredients

  • 3 medium beefsteak tomatoes
  • 1/4 tsp kosher salt
  • 1/4 cup fresh breadcrumbs
  • 1/4 cup finely grated Asiago cheese
  • 1 T chopped fresh flat-leaf parsley
  • 1 tsp coarsely chopped fresh thyme
  • 2 tsp extra-virgin olive oil
  • pinch of salt
  • 1/8 tsp pepper

Step 1

Position an oven rack 6" from the broiler element and heat the broiler on high. Slice the tomatoes 1/4" thick and arrange the slices on a 10x12" baking dish in a single, slightly overlapping layer. Sprinkle with the kosher salt.

Mix the breadcrumbs, Asiago cheese, parsley, thyme, olive oil, pinch of salt and pepper. Sprinkle evenly over the tomatoes. Broil until the breadcrumbs are a deep golden-brown, 2-3 mins. Drizzle with more olive oil and serve.
