Ingredients
- 1 c. oatmeal (quick)
- 1 1/4 c. boiling
- 1/2 c. shortening
- 1 c. sugar
- 1 c. brown sugar
- 2 eggs
- 1 1/2 c. flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 tsp. vanilla
Preparation
Step 1
Pour boiling water over oats, and let cool for 20 minutes. Cream together shortening, sugars and eggs. Mix well. Add oats and blend. Fold in dry ingredients which have been sifted together. Add vanilla. Pour into greased and floured pan. Bake at 350 degrees for 30-35 minutes. When cake is done spread topping on cake and put under broiler until browned.
TOPPING:
Melt 6 T butter. Add 1 c. sugar, 1/4 c. cream or milk, 1 c. coconut, 1/2 c. chopped nuts, and 1/2 tsp. vanilla.
