  • 2/3 cup olive oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 cup white whole wheat flour (or all-purpose)
  • 1/4 cup packed dark brown sugar
  • 1 teaspoon powdered ginger
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups rolled oats
  • 2 small apples, cored and shredded (you want about 10 ounces of shredded apple)
  • 1 cup shredded cheddar cheese

Step 1

Preheat the oven to 375°F. Line two baking sheets with parchment or silpats.

Whisk the olive oil and egg in a bowl until well-combined, then whisk in the vanilla extract.

In a large bowl, whisk together the flour, brown sugar, ginger, baking powder, salt, and oats. Stir in the apple and cheddar. Stir in the egg mixture, just until no pockets of flour remain.

Drop the dough by heaping tablespoonfuls onto the prepared baking sheet, leaving at least an inch between. Bake for about 17 minutes, until the cookies are lightly browned with crispy bits around the edges. Cool the cookies on the baking sheets for 5 minutes, then transfer them to cooling racks to finish cooling.

These cookies keep for a few days at room temperature in an airtight container.
