    heads romaine lettuce

  • 3

    cloves garlic

  • 1/2

    Tbsp. dry mustard

  • 1 1/2

    tsp. Worcestershire sauce

  • 1/2

    lemon, juiced

  • 4

    anchovies

  • 2 1/2

    Tbsp. red wine vinegar

  • 1

    c. olive oil

  • 2/3

    c. romano cheese, grated

  • 1

    c. croutons

  • Croutons:

    Tbsp. olive oil

    clove garlic, minced

  • 3 1/2

    in. thick slices day old Italian or heavy whole wheat bread

Directions

Salad: In large wooden bowl, mash together garlic cloves, mustard, worcestershire, lemon juice, anchovies and vinegar until smooth. Pour in olive oil while whisking and mix until smooth. Mix in cheese, toss with romaine and croutons. Croutons: Preheat oven to 350. Combine oil and garlic in a small bowl. Add bread cubes and toss to coat well. Spread on baking sheet. Bake until lightly toasted, tossing once, about 15 minutes.
