Ingredients
- 1 cup zucchini, coarsely chopped
- 1/2 cup onion, coarsely chopped
- 1 lb sweet Italian turkey sausage (4 links)
- 2 garlic cloves, pressed
- 1 jar (26 oz) spaghetti sauce
- 2 cans (14-14.5 oz each) beef broth
- 1 cup water
- 1 1/2 cups (4 oz) uncooked pasta nuggets
- 2 Tbsp snipped basil (optional)
Preparation
Step 1
1) In heated 4-qt pot, add sauage, onion & garlic.
2) Cook sausage 8-10 minutes or until no longer pink, breaking sausage into crumbles. Drain.
3) Add spaghetti sauce, broth & water; bring to a boil.
4) Stir in pasta.
5) Reduce heat; simmer uncovered for 7 minutes.
6) Stir zucchini into chili; cook 2-4 minutes or until zucchini & pasta is tender.
7) Remove from heat; stir basil into soup if desired.
