Vegetable Beef Stew

Ingredients

  • 1 lb stew meat
  • 1 bay leaf
  • 1/2 tsp thyme
  • 1 lb canned crushed tomatoes
  • 1 cups potatoes, chopped
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 2 cups carrots, chopped
  • 1 clove garlic, minced
  • salt/pepper

Preparation

Step 1

1) Brown stew meat in skillet.
2) In 4-qt pot, fill half full with water.
3) Add browned stew meat, bay leaf, thyme, crushed tomatoes & potatoes.
4) Cook for 1 hour.
5) Add celery, onion, carrots, garlic, & salt/pepper for seasoning.
6) Cook 15-20 minutes until veggies are soft.
