Asian Lettuce Rolls

Ingredients

  • 2 pkgs (3 oz each) chicken-flavored ramen noodles
  • 2 cups coarsley chopped cooked chicken
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1/2 cup green onions, thinly sliced
  • 2 Tbsp reduced sodium soy sauce
  • 2 tsp Asian seasoning
  • 2 tsp vegetable oil
  • 1 garlic clove, pressed
  • 1/2-inch piece of fresh gingerroot, peeled & pressed
  • 1 medium cucumber, scored, seeded & thinly sliced
  • 2 medium carrots, peeled & cut into julienne strips
  • 1/4 cup chopped peanuts (optional)
  • 24 Boston lettuce leaves
  • 1 jar (11.5 oz) sweet & sour sauce

Preparation

Step 1

1) Cook ramen noodles acording to package; Drain noodles & rinse until cold water.
2) Slice tops & bottoms of bells peppers. Remove stems, and chop the bottoms & tops into diced pieces. Slice remaining (center pieces) of peppers, and set slices aside.
3) Place noodles, chicken, chopped bell peppers & green onions into medium bowl.
4) In small bowl, combine soy sauce, oil, pressed ginger, & garlic. Pour over noodle mixture; toss to coat. Cover & refrigerate.
5) To serve, top each lettuce leaf with noodle salad & vegetables. Top with peanuts (optionals). Drizzle with sweet & sour sauce & roll up.
