Ingredients
- 1 small onion,chopped
- 3 cloves garlic, minced
- 1 T oil
- 1 1/2 t chili powder
- 2 cups salsa
- 1/2 t cumin
- 1/2 t cinnamon
- 1 pinch salt
- 2 1/2 cup cooked shredded chix
- 8 12"flour tortilla
- 1 cup canned refried beans
- pam
Preparation
Step 1
450* in large saucepan over med high heat, saute onion and garlic in oil until tender. stir in salsa, chili powder, cumin, cinn and salt. fold in chix. remove from heat and set aside.
working with one tortilla at a time, spoon 2 T beans down center of each tortillas, top with scant 1/2 cup chix mix.
fold top and bottom of tortillas toward center, then roll up sides.
secure with toothpicks.
place in 13x9 baking pan, seam side down.
spray all sides of chimichangas with light coating of pam.
bake 20-25 min or until golder brown and crisp. turning after 10 min
