Ingredients

    cup water

  • 1/4

    tsp. salt

  • 1/4

    cup quick-cooking grits, uncooked

  • 2

    cups milk

  • Ground nutmeg (optional)

  • 1

    T butter

  • 2

    large eggs

  • 1/4

    cup sugar

  • 1/3

    cup raisins

Directions

BRING water and salt to a boil in heavy saucepan; gradually stir in grits. Cook 4-5 minutes, stirring occasionally. Gradually stir in milk; return to a boil. Remove from heat; add butter; set aside. BEAT eggs and sugar until frothy. Gradually stir about on-fourth of hot mixture into eggs; add to remaining hot mixture, stirring constantly. Stir in raisans. Pour mixture into a lightly greased 1 ½ qt. baking dish. Place in a large baking pan. Add hot water to pan to depth of 1 inch. BAKE at 350 for 1 hour, stirring at 20 minute intervals. Sprinkle with nutmeg if desire. Yield: 4-6 servings
