Fettucine Alfredo with Spinach Meatballs

Ingredients

  • 10 Oz pkg frozen chopped spinach
  • 1 lb ground beef
  • 1 egg
  • 1 c fresh bread crumbs (2 slices)
  • 1/4 c water
  • 1 tsp salt
  • few dashes of pepper
  • 12 oz fettucine noodles
  • 1 1/2 c half and half
  • 3/4 c parmesan cheese
  • 1/2 c butter

Preparation

Step 1

Thaw spinach and squeeze dry.
Mix meat, egg, bread crumbs, water, salt, pepper, and spinach.
Shape into 1 inch balls.
Bake in 400 degree oven for 20 minutes.

Prepare noodles-drain
Over low heat, toss noodles with cream, butter, and cheese until heated through.

Add baked meatballs-toss gently
