Ingredients

  • 6 large eggs
  • 1/2 C. all-purpose flour
  • 1 1/2 t. baking power
  • 1 . C. whole milk
  • 1 C. finely chopped *Drier's* ham
  • 3 oz. cream cheese
  • 2 C. shredded longhorn cheddar cheese
  • 1 . C. cottage cheese
  • 2 T. unsalted butter plus more as needed
  • 3 scallions, white and green parts chopped
  • 1 T. finely chopped fresh parsley
  • 1/4 t. sweet paprika
  • 1 t. salt
  • 1/2 t. freshly ground black pepper

Preparation

Step 1

1 Preheat the oven to 350. Lightly better a 9x9x2 inch baking casserole.
2 In a electric mixer bowl, beat the eggs for 1 min. then stir in the flour and baking powder. Slowly beat in the milk. Add the ham, cream cheese, cheddar cheese, cottage cheese, 2T.of butter, scallions parsley,paprika,salt and pepper. Continue mixing until well blended, about 3 min. at medium speed. Transfer to the cassrole and bake until a knife inserted into the middle of the casserole comes out clean and the top is golden brown, 50 to 60 min.
