Tomato-Cream Sauce

Ingredients

  • 1 Tbsp olive oil
  • 1 clove garlic, finely chopped
  • 1 medium onion, chopped (1/2 cup)
  • 1 Tbsp chopped fresh parsley or 1 tsp parsley flakes
  • 1 Tbsp chopped fresh or 1 tsp dried basil leaves
  • 1 can (28 oz) Italian-style pear-shaped (plum) tomatoes, drained & chopped
  • 1/2 cup whipping (heavy) cream
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/8 tsp pepper

Preparation

Step 1

1) Heat oil in 12" skillet over medium-high heat.
2) Cook garlic, onion, parsley, basil & tomatoes in oil 10 minutes, stirring occasionally.
3) Stir in remaining ingredients.
4) Cook about 20 minutes, stirring occasionally, until sauce is thickened.
5) Use sauce immediately, or cover & refrigerate up to 24 hours. Freezing is not recommended because sauce will seperate when re-heated.
