Sweet-Sour Cucumber Salad

Ingredients

  • 2 large European-style cucumbers
  • 1/2 cup lemon juice or white wine vinegar
  • 1/2 cup sugar
  • 1 teaspoon salt
  • dash white pepper
  • 4 tablespoons chopped fresh new dill or 4 teaspoons dried dill weed
  • fresh dill sprigs, for garnish

Preparation

Step 1

Scrub the cucumbers and slice paper-thin. Place the slices in a medium-sized bowl. Mix the lemon juice (or vinegar), sugar, salt and pepper and pour over the cucumbers. Sprinkle with the chopped dill. Refrigerate for 3 hours to allow the flavors to blend. Drain. Garnish with dill sprigs and serve.
