Ingredients
- 2 lb. peaches
- 1/4 cup flour
- 1/4 cup sugar
- pinch salt
- 1 tea. bourbon
- 1/2 tea. vanilla

Preheat oven to 375 degrees.
On a lightly floured surface, roll out dough slightly thinner than 1/8" thick, dusting work surface and dough as necessary to keep the dough from sticking. Cut dough into14 - 4" circles.
Peel and chop peaches into small bits (approx. 1/2". Mix them with flour, sugar, and salt and add bourbon and vanilla. Spoon 1-2 teaspoons of the filling in the center of each circle. Lightly brush edges with a little water. Fold each circle in half, making sure to lightly press top of pastry to distribute the filling evenly. Seal edges together with tines of a fork, dipping the fork into flour as necessary. Pierce tops with tines of a fork. Place on prepared baking sheets. Refrigerate for 15 minutes.
Brush tops of pies with cream. If desired, sprinkle sugar over cream.
Bake pies in preheated oven for 25-35 minutes or until golden brown. Let cool on pans for 10 minutes. Transfer to a wire rack and let cool completely.
