Chicken Burrito Pizza

A great Mexican pizza and it's healthy!

Ingredients

  • Pizza:
  • 2 tablespoons salsa
  • 1 11-inch round pizza crust
  • 1 cup low-fat mozzarella, shredded
  • 1 4-oz chicken breast, grilled and diced
  • 4 tablespoons black beans
  • 1/2 red onion, thinly sliced
  • Pico De Gallo Topping:
  • 1 large tomato, diced
  • 1 small green chili, diced
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 red onion, diced
  • salt
  • Guacamole Topping:
  • 1 large avocado
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 red onion, diced
  • Juice of 1 lime
  • Salt & Pepper

Preparation

Step 1

Preheat oven to 450F.

Spread salsa evenly over dough then top with mozzarella. Top cheese with chicken, beans and onions. Bake 7-10 minutes or until edges are golden brown.

Meanwhile prepare toppings.
Pico: Combine tomato, chili, cilantro, and onion in small bowl, season with salt & pepper and set aside.

Guac: Put flesh of avocado into small bowl and mash with a fork. Mix in cilantro, onion, and lime juice. Season with salt & pepper and set aside.

Remove Pizza from oven and cut into 12 slices. Serve topped with pico de gallo & guacamole.

Per slice (with 2 tablespoons guac and 1 tablespoon pico): 107 calories, 3g fat, 1g sat fat, 12g carbs, 8g protein, 2g fiber
