Ingredients

  • Combine in large mixing bowl:
  • 1 cup oil
  • 3 eggs
  • 2 cups sugar
  • 2 cups shredded zucchini
  • Add:
  • 3 cups flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 1 cup nuts

Step 1

Pour into 2 large loaf pans (or 1 medium and 3 small).

Bake at 350 for 50-60 minutes or until done in middle.
