White Bean "BLT" Tartine

Ingredients

  • 1/2 cup cherry tomatoes, halved
  • 3/4 cup rinsed and drained canned great Northern beans
  • 2 Tbsp crumbled feta cheese
  • 2 Tnsp chopped fresh parsley
  • 1 Tbsp chopped fresh basil
  • 1/4 tsp chopped garlic
  • 2 Tbsp olive oil
  • 4 slices rustic whole grain bread toasted
  • 1/4 cup radicchio

Preparation

Step 1

Heat broiler. Put tomatoes cut side up on foil lined baking sheet. Broil 5 inches from heat until wilted, 3 minutes. Set aside.
Puree beans, feta, parsley,basil, garlic and 1 Tbsp olive oil in food processor until smooth (makes about 2/3 cup)
Spread bean mixture on bread and top with radicchio and roasted tomatoes. Drizzle with olive oil.
