Ingredients

  • 1 white onion, quartered
  • 1 1/2 lb grape tomatoes halved
  • 2 cloves chopped garlic
  • 1/2 lb yellow summer squash sliced
  • 8 cups reduced sodium chicken broth
  • 1 tsp adobo sauce (from canned chipotles)
  • 1 avacado, chopped
  • 1/2 cup cilantro sprigs
  • 3 yellow corn tortillas (6inch) sliced and toasted

Preparation

Step 1

Broil onion and 1lb tomatoes on foil lined baking sheet 5 inches from heat, turning until slightly charred, about 5 minutes. Coarsely chop in food processor with garlic.
Add tomato-garlic mixture, squash, broth, adobo sauce and remaining tomatoes to pot. Simmer 20 minutes. Serve topped with avocado, cilantro and tortilla strips.
