Ingredients
- 2 med. sweet potatoes (1 lb.), peeled and cut into 2" chunks
- 4 cups flour
- 1/2 cup light brown sugar
- 5 tsp. baking powder
- 1 tsp. salt
- 10 Tbs. butter
- 1/3 cup milk

Step 1
In 3-quart saucepan over high heat, heat taters with water until boiling. Simmer, covered, 12-15 minutes or til fork tender. Drain, mash & set aside to cool. Preheat oven to 425 degrees. In large bowl, combine flour, sugar, baking powder & salt. Cut in butter with pastry blender til crumblike. Stir in milk and mashed taters. Mix til just combined. On lightly floured surface, pat dough into an 8 1/2" square. Cut dough in half. Cut each half into 10 equal pieces. Place two inches apart on ungreased cooky sheet. Bake 12-15 minutes till golden. Reheat, if necessary, before serving. Makes 20 biscuits.
