ROASTED POTATOES AND ONIONS

Ingredients

  • 4 cups chunked red potatoes (about 4 medium potatoes)
  • 1 cup coarsely chopped yellow onion
  • 2 TBS seasoning (coarse flake salt, paprika, black pepper, thyme, rosemary, garlic and chipotle)
  • 2 TBS olive oil

Preparation

Step 1

1. Oven 375 degrees
2. Coarsely chop onion and place in large bowl. Chop
UNpeeled potatoes into bite-sized pieces and add to onions.
3. Toss the potatoes and onions w/ the season until well coated and then add oil and toss to evenly coat.
4. Place potatoes in 13x9" pan and place in oven.
5. Stir the potatoes every 10" for the first 30", then bake uninterrupted for add'l 30-40 minute or until potatoes nice and brown.
