CARMELIZED BACON-WRAPPED PINEAPPLE

Ingredients

  • 12 slices thick-sliced bacon, cut in half crosswise
  • 1 pineapple, peeled, cored, cut into 24 one inch cubes
  • 24 bamboo skewers
  • 1/4 cup dark brown sugar
  • sweet and sour sauce

Preparation

Step 1

1. Preheat oven to 375 degrees. Line baking sheet with parchment paper
2. Wrap one piece of bacon around each pineapple chunk and skewer
3. Place on baking sheet and bake for 5 minutes (probably longer).
4. Remove from oven and sprinkle generously w/ brown sugar. At this point, the dish can be refrigerated for up to 48 hours, if desired. When ready to serve, return to oven and cook for 5" until carmelized. Serve warm with sweet and sour sauce.
