Ingredients
- 2 cups flour
- 2 cups sugar
- 2 t. cinnamon
- 1 t. baking soda
- 1/2 t. salt
- 3 eggs
- 1 1/2 cups canola veg oil
- 2 cups finely grated carrots
- 1 t. vanill
- 1 cup well drained crushed pineapple
- 1 cup coconut
- 1 cup chopped nuts
- Frosting
- 6-8 oz softened cream cheese
- 6 T.butter softened
- 3 cup conf sugar
- 1 t. vanilla
- additional chopped nuts

Preparation
Step 1
350* ..in a large bowl combine flour, sugar,cinnamon,baking soda and salt. add eggs, oil,carrots and vanilla. beat until combined. stir in pineapple, coconut and nuts.
pour into greased 13x9 bakinhg pan or 2 9 inch round pans.
bake 350* for 50-60 min. or until toothpick inserted near center comes out clean. cool on wire rack..
Frosting
beat cream cheese and butter in small bowl til fluffy. add conf. sugar and vanilla. beat til smooth..frost cakd and sprinkle with additional chopped nuts.. store in refrigerator
