Ingredients

  • 3/4 package of spaghetti
  • 2 c broccoli (cut)
  • 2 T oil
  • 1 package of mushrooms (cut in half)
  • 1 small onion (minced)
  • 1 small carrot
  • 1 small red pepper
  • 1 12 o. can evaporated skim milk
  • 2 tsp. chicken flavor bouillon
  • 1 1/4 tsp. corn starch
  • 1/2 tsp. salt
  • 1 medium tomato
  • 2 T Parmesan cheese
  • 2 T parsley

Step 1

Prepare spaghetti as directed. Drain and return to pot to keep warm. Meanwhile, in 2 quart pan, heat broccoli in 1 inch of boiling water. Reduce heat, cover and cook until tender. While broccoli is cooking, in skillet cook mushrooms, onion, and carrot in oil until vegetables are golden and tender-crisp. Add red pepper and cook until tender. In 2 c. measuring cup, mix evaporated milk. bouillon, corn starch and salt. Stir with a fork. Add this to vegetable mixture. Heat to boiling and boil for 1 minute. Add diced tomato, Parmesan cheese, parsley, broccoli and spaghetti. toss to coat well. Heat through.
