Aussie Lamingtons

Ingredients

  • ICING:
  • 6 eggs
  • 3/4 c. sugar
  • 1 c. self-rising flour
  • 1/3 c. corn flour
  • 1/3 c. water
  • 2 T butter (melted)
  • 3 c. coconut
  • 4 c. powdered sugar
  • 1/3 c. cocoa
  • 1 T butter
  • 1/2 c. milk

Preparation

Step 1

Grease a 23 cm. square pan. Beat eggs in bowl until thick and creamy, gradually add sugar until dissolved between each addition. Transfer mixture to a large bowl, fold in flours then combined water and butter.

Pour into prepared pan. Bake in moderate oven for 35 minutes. Stand 5 minutes before turning on to wire rack. trim any crusts and cut into 25 squares. Dip each in icing, toss on coconut and stand on wire rack to set.

ICING:
Sift sugar and cocoa into a heatproof bowl. stir in butter and milk. Stir over hot water until icing is smooth.
