Ingredients

  • Meat of one cooked chicken
  • 2 med onions chopped
  • 2 cloves of garlic pressed
  • 3 TBLs Tomato paste
  • 6 cups of water
  • 6 TBLS of Natural Peanut Butter
  • 2 Maggi Cubes
  • 2 Bay Leaves
  • 4 TBLS Oil
  • Carrots chopped in 1-2” slices

Preparation

Step 1

Heat oil in a sauce pan, add chicken, onions and garlic. Cook till transparent.
Heat 1 cup of water enough to dissolve the maggi cubes, add tomato paste,
Add the tomato mixture to chicken mixture. Add the remainder of water/5 cups, carrots and bay leaves.
Cook on low heat until it simmers.

Take some of the sauce and add to the peanut butter, stir until it dissolves. Stir the peanut sauce into the chicken sauce and simmer for 20 mins or until thickened. Stir often so the peanut butter doesn’t settle and burn. Use a heat diffuser under the pan if you have one, will prevent burning.
Add salt and pepper to taste.
Some people like red pepper flakes added for some hot spicy taste.

Enjoy on top of white rice!
