Ingredients
- 1 cup long-grain wild rice
- 1/2 cup dried cherries, cut into small pieces
- 3/4 cup diced green onions
- 1/4 cup Marzetti's Simply Dressed Balsamic dressing (may need to add more dressing after refrigerating for 4 hours or more)
- 1/2 cup pine nuts, toasted.
- Optional: diced cooked chicken breast
Preparation
Step 1
Boil wild rice in lightly salted water and cool (use hand harvested wild rice and boil in 3 cups of salted water for 35 - 40 minutes). Drain and cool.
Add:
1/2 cup dried cherries cut into small pieces
3/4 cup of diced green onions
Mix; check to make sure there is enough for "one of everything" in a spoonful. If not add a little more.
Add dressing and mix. Test by tasting to see if the dressing is enough. Should be lightly dressed and not runny with dressing. Add more if needed to taste. Refrigerate overnight or for 4 hours.
Toast pine nuts (put in dry fry pan on medium heat and stir constantly until they start to brown … do not burn!) and keep in tightly covered container until ready for serving.
Mix nuts with cooled mixture just before serving. This salad can be kept at room temperature for quite some time, so works well for pot luck
This recipe probably would work with cut up chicken breast in it for a complete salad.
