Ingredients
- 2 large Idaho potatoes
- 12 slices bacon
- 2 c canola oil
- 2 tbsp unsalted butter, melted
- 1 tbsp honey
- 1 tbsp chopped scallions
- 1/2 tsp chopped fresh parsley
- Kosher salt and freshly ground pepper
Preparation
Step 1
Cut each potato lengthwise into 6 wedges. Wrap each wedge with a slice of bacon and secure each end with a toothpick. Place the oil and potato wedges in a large saute pan. Over medium high heat, cook the wedges until tender, turning occasionally, about 20 mins. Increase the heat to high and cook until the bacon is crisp, 5-10 mins. Transfer to a paper towel lined plate to drain.
In a small bowl, mix the melted butter, honey, scallions, parsley, 1/2 tsp pepper and salt to taste.
Carefully remove the toothpicks from the potato wedges and transfer to a platter. Drizzle with butter mixture.
