Ingredients

  • 2 Tbsp olive oil
  • 1 C chopped onion
  • 1 1/2 C chopped celery
  • 1 1/2 C chopped green pepper
  • 3 cloves minced garlic
  • 2 28 oz cans diced tomatoes
  • 3 15-16 oz cans beans - any black,kidney,pinto,great northern beans
  • 1/2 c raisins
  • 1/4 c red wine vinegar
  • 4 tsp chili powder
  • 1 Tbsp parsley chopped
  • 1 tsp sugar
  • 1 1/2 tsp chopped basil - more to taste
  • 1 1/2 tsp oregano
  • 1 tsp allspice
  • 1 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp hot pepper sauce
  • 12 oz beer
  • 3/4 C cashew nuts chopped if desired
  • Shredded daiya cheese

Preparation

Step 1

In 6 qt pan, heat oil - add celery, green pepper, onion & garlic. Cook covered on medium heat 10 mins. Stir in rest of ingredients EXCEPT cheese. Bring to a boil uncovered then simmer covered for 1 1/2 hrs - stir well- then simmer 1/2 hr more - sprinkle cheese on top of each serving. Makes 12 cups.
Note: after bringing to boil I put all in 6qt crockpot on low for 6-7 hrs
