Gramma Gerri's Vegan Chili

Ingredients
- 2 Tbsp olive oil
- 1 C chopped onion
- 1 1/2 C chopped celery
- 1 1/2 C chopped green pepper
- 3 cloves minced garlic
- 2 28 oz cans diced tomatoes
- 3 15-16 oz cans beans - any black,kidney,pinto,great northern beans
- 1/2 c raisins
- 1/4 c red wine vinegar
- 4 tsp chili powder
- 1 Tbsp parsley chopped
- 1 tsp sugar
- 1 1/2 tsp chopped basil - more to taste
- 1 1/2 tsp oregano
- 1 tsp allspice
- 1 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp hot pepper sauce
- 12 oz beer
- 3/4 C cashew nuts chopped if desired
- Shredded daiya cheese

Preparation
Step 1
In 6 qt pan, heat oil - add celery, green pepper, onion & garlic. Cook covered on medium heat 10 mins. Stir in rest of ingredients EXCEPT cheese. Bring to a boil uncovered then simmer covered for 1 1/2 hrs - stir well- then simmer 1/2 hr more - sprinkle cheese on top of each serving. Makes 12 cups.
Note: after bringing to boil I put all in 6qt crockpot on low for 6-7 hrs
