Ingredients
- Fish:
- 1/4 cup sweet paprika
- 2 TB ground thyme
- 2 tsp onion powder
- 1 tsp garlic powder
- 1/4 tsp ground red pepper
- 1/4 cup (1 stick) butter, melted
- 4 (10 oz) grouper fillets
- 4 Kaiser Buns, split, buttered and toasted
- Cilantro Lime Mayo:
- 1 cup (Light) Mayo
- 1/4 cup chopped fresh Cilantro
- 1 TB fresh lime juice

Step 1
Fish:
In a shallow dish, combine first 6 ingredients.
Pour melted butter in another dish. Dip fish fillets in butter, coat with seasoning mixture.
Heat a cast-iron skillet over med-high heat until hot. Cook prepared fish, 3 - 4 minutes per side or until fish flakes easily with fork.
Cilantro Mayo:
In a small bowl, combine all ingredients. Cover and chill.
Spread mayo evenly over toasted buns. Place fish on buns.
