  • 1 egg
  • olive oil
  • 2 minced sun dried tomato halves
  • 2 slices whole grain toast
  • 1 1/2 oz goat cheese
  • 1 cup arugula
  • 4 thin slices of zucchini
  • 1 tsp fresh lemon juice

Preparation

Step 1

Prepare egg in omelet style wiht sun dried tomatoes and olive oil. Season with salt and pepper and placed between 2 slices of toast. Serve with goat cheese, arugula, zucchini and squirt with lemon juice.
