  • 20 jalapenos
  • 8 oz. pkg. softened cream cheese
  • 1 6 oz. pkg. grated parmesan cheese
  • 2 T. crushed red pepper flakes
  • 1 small pkg. HOT Owens country sausage

Step 1

Cut off stem from peppers and slice into halves lengthwise. Remove all seeds.
Wash pepper halves and lay out to dry.

Fry sausage and mash into smallest pieces possible while frying. Drain.
Add to the sausage: cream cheese (cut into smaller pieces), parmesan cheese and red pepper flakes. Mix all until well blended (I cheat and use a mixer to stir mine together good).

Place peppers onto a broiler pan (this allows the grease to drain into the pan below as they are cooking). Stuff each pepper with sausage filling and bake at 350 for approximately 30-45 minutes until a golden brown. Eat while hot or cold.
(These may be made up the day before and baked later – also very good to reheat if you have leftovers.) I have kept them in the refrigerator for 3 days and reheated as needed.

Excellent for appetizers or to serve with Mexican food.
