Ingredients
- 2 pounds Chicken pieces
- 2 T Olive Oil
- 1 13-oz can Chicken Broth
- 1 16-oz can Tomatoes, diced
- 1 t Salt
- 1/2 t Freshly Ground Black Pepper
- 2 cloves Garlic, crushed
- 1/2 cup Onion, Chopped
- 1/4 t Turmeric
- 1 Bay Leaf
- 10 ounces Frozen Peas
- 1 cup Long-Grain Rice
Preparation
Step 1
In a skillet, brown chicken in oil; pour off fat. Add broth, tomatoes, onion, garlic, salt, turmeric, pepper and bay leaf.
Cover; cook over a low heat 15 minutes. Add remaining ingredients.
Cover; cook 30 minutes more or until chicken and rice are tender; stir occasionally. Remove bay leaf.
